Sticky Broccoli & Cashew Salad Recipe

Serves 4


4 heads broccoli
150g cashew nuts
150ml sweet chilli sauce
100ml soy sauce
1 red chilli


  • Cut broccoli into long florets and steam for 2 and half minutes
  • Refresh in ice water and drain when cool
  • In a large bowl add thinly sliced red chilli and lightly crush cashew nuts
  • Add in soy sauce and sweet chilli and mix thoroughly
  • Bake at 200C for 5-8 minutes until slightly charred
