For the first time, I will post a recipe from the traditional cuisine of my home country. Lazy dumplings don’t look like the usual dough pockets with filling. They look more like Italian gnocchi.
Makes 5 portions. Preparation is about 40 minutes.
What ingredients will you need?
- 3 eggs
- 400g of curd cheese/quark
- 150g of potatoes
- 40g of corn flour
- 30g of plain wheat flour, plus some extra for forming the dumplings
- 30g of soft, preferably unsalted butter
- salt, to taste
- sugar, to taste
And this is how the magic happens:
- Start by peeling the potatoes, and cooking them with a dash of salt. They should be quite soft, almost falling apart. Drain them, and cool down. Puree them until smooth.
- Prepare the curd cheese/quark. It is usually sold in a quite solid, yet crumbly form. If it has some liquid in the packaging, drain it first. Use a blender on it until quite smooth and creamy.
- Separate the egg whites, and yolks. It’s important that no yolk get’s in the egg whites, as it makes it harder to beat them.
- Sift the corn flour and plain wheat flour together.
- Put the egg yolks in a bowl with soft butter, and mix it. You may want to use a mixer. If you plan to add sugar to the lazy dumplings, this is a good moment to do it.
- Add potatoes and curd cheese/quark to the egg and butter mixture.
- Beat the egg whites with a little salt until stiff. They are ready, when you can turn the container upside down, and they stay in place.
- Gradually combine the mixture with flours and egg whites. Don’t put all of the flour and egg whites at once, instead, put them in small portions. Don’t overmix it! The mixture might be a little runny, but it’s fine.
- Dust the table or board with some of the flour. Put some mixture on the flour, and form a ‘snake’ about 3 cm in diameter. Don’t knead, the dough has to stay soft and aerated. Cut the snake into pieces 4-5 cm long.
- Put the dumplings in the boiling water and cook until soft and floating on the surface
- Serve with sauces of your choice, both savoury or sweet. They are a good as a starchy add on to a meal as well.
- Try them with runny breadcrumbs fried with butter and sugar. It’s delicious!
