Meet the Catering Team...Alan Scott, our new Sous Chef
Following 37 years service it was with great sadness that we said goodbye to our Sous Chef, Stevie, in September and welcomed Alan to our small and talented Chef Team.
It was a pleasure to sit and chat to Alan and find out a little more about him!
What made you decide to become a Chef?
My grandad was a master baker and growing up I spent my weekends and evenings in the bakery with him. This was an incredible time and I have fantastic memories of my time spent with him.
Tell me about your training and experience?
I started my career in 1993 as a Junior Commis Chef at the Motorhouse in Glasgow. During the first 10 years of my career I bounced around a lot - I think I must have had 22 jobs in that time! As I got older I settled down a lot and I was in my last position as a Head Chef at Bailey Gifford in town for 10 years,
What is your favourite dish to cook at home?
That's a hard one, anything slow cooked? I do make a seared duck with Black Cabbage and fondant potatoes which is a hit with the family - maybe I should try that as a special here!
Anything you don't like to cook?
Liver. I will always try and get anyone else to cook it if I need to cook with it. And Seafood, but that's just because I'm allergic and it could kill me!
And in your spare time?
I have two kids, Euan who is 10 and Eva who is 5, and a beautiful wife of 24 years. They definitely keep me busy and on my toes! I am music daft and a passionate mountain biker so you'll normally find me out and about on the weekends at various events.
Pop by to 1875 and you'll find him behind one of the counters or in the kitchen preparing and serving our fantastic new menu!
