Make the Most of Your Catered Kitchen
Many of us come to University thinking it’s easier and more convenient for our busy student lifestyles to go for catered accommodation. However there comes a time when you want a meal (or snack) at a not so social hour and find yourself stuck because the food court is no longer open, and how are you supposed to cook in your catered kitchen with just a microwave?
Luckily, this article is here to answer that very question. We have put together a collection of recipes that are microwave-friendly and extremely easy to make.
Who said you couldn’t make fried rice with a microwave? Just check out this recipe!
Making a jacket potato in the microwave is so simple and quick to do – much better than waiting for it to cook in the oven. So it’s a great idea for a late night meal after the food court has closed, and potatoes are a vegetable – so it’s healthy, right?

Who doesn’t love Mexican food? This quesadilla only takes 4 minutes to make - quicker than speedy Gonzales.

BBQ Chicken Nachos
Continuing with the much loved Mexican theme, here is a recipe for some amazing nacho. Who knew you could do them in the microwave!
Crispy Microwave Bacon
This method of cooking bacon in the microwave doesn’t involve the usual bacon getting stuck to the paper towels. If you like your bacon crispy, try heating the slices up on top of an overturned bowl (microwavable of course!). Apparently the extra fat drips down the sides of the bowl, leaving you with extra crispy bacon.
…and now onto the sweet stuff! Have a go at making these chocolate-y microwave brownies!
Easy Apple Crumble
Why not have a go at this winter favourite? Who knew you could make apple crumble in a microwave? Game changer.

Maybe add some custard too…it only takes two minutes!
Microwave Mug Cake
We can’t miss out the infamous mug cake. It’s so quick and easy to do – perfect for a late night snack! Just follow the recipe here and feel free to add chocolate chips or fruit (if you want to make it healthy).
Hopefully these recipes will help you make more of your catered kitchen! We run weekly Let's Get Cooking sessions every Thursday in John Foster Dining Hall.
